While granola makes a wonderful snack for road trips or as snack box stuffers, use them to jazz up a few basic ingredients to make for a splendid entrée or dessert!

GRANOLA CRUSTED OVEN “FRIED” CHICKEN This simple recipe delivers sweet and savory crispy chicken tenderloins that are bound to win over even the pickiest kid.

INGREDIENTS: • 1.5 lb (600g) chicken tenderloins, thawed

• 1 cup (340g) egg whites • ½ cup (170g) bread flour • ½ cup (170g) Lime, Coconut, Macademia Burst Paleo Granola • 3 tbsp extra virgin olive oil • Light Canola Oil Cooking Spray

INSTRUCTIONS: • Spray a large baking dish with spray oil, set aside. • Blend Lime, Coconut, Macademia Burst Paleo Granola in a food processor or powerful blender to powder consistency. Mix with flour on a flat plate. • Mix egg whites and olive oil until blended. • Set up a dipping station: chicken first, egg white mixture, then granola mixture. • One by one, dip tenderloins in egg white mixture, then granola mixture, covering completely, then place in baking dish. • Place the breaded tenderloins in the freezer for 20 minutes to allow the breading to set. • Remove tenderloins from freezer and spray a thin layer of oil on them. • In a 375°F (190.5°C) pre-heated oven, bake for 15 minutes, flip, then spray another thin layer of cooking spray on top of the tenderloins and continue baking for an additional 5-10 minutes depending on your oven. • Remove from oven and serve with sides.
